I’m Bruce, I was born in the North East of Scotland.  Growing up in the Highlands along with my schooling gave me a passion for the freedom of the outdoors.  Cooking outdoors as a child with my father.  Nature is my escape and it inspires me personally and professionally.
Having left the North as a teen I headed for an almost two decade stint in cities.  I cut my teeth in the Michelin star & Country house hotel scene of the naughties, Lived and worked in a couple of European countries and London. The second half of my chef career was spent in prestige caterers and private cheffing.

Whilst working in London, I felt an urge to take myself away travelling to get away from the lore of the kitchen. Inspired by Ralph Waldo Emerson and Henry David Thoreau. My journeys took me to some fun and interesting places across the world for a 5 year period. The America’s, The Himalayas, Indonesia, Further Asia, Coral reefs of Australia and more.

Throughout my travels I hoped to find my hinterland. I journeyed far and wide, I found a new love for food on my my very long and winding holiday.. Picking up recipes and ideas from the places I saw. I met a woman, we moved to Bruton in Somerset and actually this become my new paradise.
